Cooking 3 types of pasta, listening to the lectures about restaurant and hotel management – the program of SWISSAM Open Days was quite intensive. During the whole weekend applicants were collecting the skills from the sphere of hospitality.

One of the most popular parts of the Open Days (from the very beginning) was the master-class by SWISSAM’s chef and the head of Culinary Arts Program Josef Fleissner. The smells of home-made pasta melted heart of every guest in the kitchen. The cooks were able to choose which sauce would they want to prepare: traditional tomato, gorgeous gorgonzola or karbonara.

While guests were in the middle of degustation, our alumni Ekaterina Penkovskaya, the owner of Greneta wine bar, explained the process of opening her own business and answered multiple questions.

Dmitry Melnikov, the General Manager of Original Sokos Hotel Olympia Garden showed the work behind his success and explained the ways of career development in the sphere of hospitality.

The main speaker of Sunday was mr. Uwe Kunz, the General Manager of Lotte Hotel. He followed the steps of 5* hotel development and discussed his own experience of working as a GM. We would like to remind you that mr. Kunz raised Lotte Hotel up to the “Best New Hotel in Europe” award by World Travel Award in 2017.

Restaurateurs were lucky to listen to the lecture of the leader of F&B course at SWISSAM mr. Patrick Farran. He found St. Petersburg on the gastronomic map of the world and followed the trends in Russia and world-wide.
